A recent article in Snack Food & Wholesale Bakery listed the largest category in the bakery industry as fresh bread. For several years, sales of fresh bread have remained as flat as the Great Plains topography, where most of the wheat is grown to make the bread. However, renewed interest in long fermentation bread and smaller portion sizes is creating an inclination in sales growth in this segment.
